Since I’ve been trying to watch my calorie intake lately, I decided to do something a little different for Miss Z’s birthday cupcakes. I knew she wouldn’t mind as long as there was frosting involved, oh, and chocolate…there definitely needed to be chocolate.
I decided to go with the weight watchers cupcakes. I’ve had different versions of this, but I had never tried this particular recipe before so I was a bit nervous.
You will need:
1 15 oz can of pumpkin
1 box of cake mix
Seriously. That’s it. You can use any cake mix you like, but as a good parent of Z, I was obligated to use chocolate.
Put ingredients into a bowl.
Put the mix into muffin tins or a cake pan, then bake. Then you’re done!! It will be pretty thick and it will bake in the position you leave it, so I would suggest patting it down or shaping it a little.
Bake for 20-30 minutes at 350 degrees.
If you don’t like pumpkin, you may not like these! You can definitely tell that it’s there. If you do like pumpkin, these are delicious-especially with the frosting.
Use any frosting you like. I put my frosting in a plastic bag and trimmed the end off to make frosting them easier.
The cupcakes were a hit!! She wasn’t too impressed with her candle when it was lit…
…but there were no complaints about the cupcakes!
