Cooking dinner can be a daunting task. Especially since it has to be something different every day.
Each night after we’re done eating, my first thoughts are, ‘Do we have enough for leftovers?’, or, ‘What should I make tomorrow night?’
That’s why I like to keep it as simple as possible, as often as possible. I’m know I’m not alone. We all have our “go-to” recipes that our family gets to eat a few times a month.
This is one of mine. Super easy chicken fajitas. The recipe is from the only cookbook I use, (everything else is Pinterest, somewhere else online, or God save my family, from my head), The America’s Test Kitchen Family Cookbook. I changed the recipe slightly to cater to my family’s tastes.
You will need:
2 chicken breasts
2 tablespoons olive oil
1 lime, half of it juiced, the other half sliced for garnish
1 bell pepper seeded and sliced
1 yellow onion halved and sliced
1 teaspoon chili powder
1/2 teaspoon cumin
2-4 tablespoons water Corn or Flour Tortillas (my husband likes corn, I like flour, so we always have both.)
1. Slice the chicken in strips. Season with salt and pepper. 2. Heat 1 T oil in a skillet and add chicken. Cook until heated through. Tranfer to a bowl and toss with lime juice from 1/2 of your lime. Set aside.
3. Heat 1 T oil in the same skillet and add your pepper and onion. Add chili powder, cumin, salt, and 2 T water. Cook until softened.
4. Add chicken back to the skillet, (along with any juices in the bowl), and heat through.
5. Serve on a heated tortilla with your favorite fajita toppings. I added cheese, avocado, and my personal favorite, cauliflower rice. So delicious!
