This past weekend was incredibly gorgeous, and so hot!! We usually don’t get this type of weather until mid-July, and we’re lucky if it lasts a month.
So we are enjoying every second of it. Summer has arrived early this year! When I started working on eating healthier a few weeks ago, I discovered a fantastic watermelon salad. It would be perfect for a BBQ on a hot day. It’s fresh, light, delicious, and so easy! Only three ingredients!
For this salad, you will need: 3 cups Seedless Watermelon (About half of a large watermelon).
1-1 1/2 cups Cucumber (I used Persian cucumbers from Trader Joe’s. When I use other cucumbers, I peel them and de-seed them).
2 oz. Feta Cheese
(With these ratios, it serves about 6.)
My dad taught me an easy way to cut watermelon and it worked perfectly for this dish. Cut it in half, and put it rind up. Then cut it in slices, rotate it, and cut it in slices again. If you want to eat it from here, just grab a piece using the rind as a holder. So easy and convenient! For this salad, cut the watermelon in cubes.
I would suggest keeping the feta on the side so people can crumble it on top of the salad right before they eat it. I’ve tried mixing it in, and while it’s still tasty, it gets a bit soggy, so it’s much better on top. That’s it! Healthy, tasty, and super simple!
