Watermelon Salad

This past weekend was incredibly gorgeous, and so hot!! We usually don’t get this type of weather until mid-July, and we’re lucky if it lasts a month.

So we are enjoying every second of it. Summer has arrived early this year!When I started working on eating healthier a few weeks ago, I discovered a fantastic watermelon salad. It would be perfect for a BBQ on a hot day. It’s fresh, light, delicious, and so easy! Only three ingredients!
This Watermelon Salad is a delicious side dish for a picnic or party!
For this salad, you will need: 3 cups Seedless Watermelon (About half of a large watermelon).

1-1 1/2 cups Cucumber (I used Persian cucumbers from Trader Joe’s. When I use other cucumbers, I peel them and de-seed them).

2 oz. Feta Cheese

(With these ratios, it serves about 6.)

My dad taught me an easy way to cut watermelon and it worked perfectly for this dish. Cut it in half, and put it rind up. Then cut it in slices, rotate it, and cut it in slices again.If you want to eat it from here, just grab a piece using the rind as a holder. So easy and convenient!For this salad, cut the watermelon in cubes.

Then, with the cucumbers, I sliced them in fourths length-wise, then chopped them up. Gently toss the ingredients together and put it in the fridge until you’re ready to serve.

I would suggest keeping the feta on the side so people can crumble it on top of the salad right before they eat it. I’ve tried mixing it in, and while it’s still tasty, it gets a bit soggy, so it’s much better on top.That’s it! Healthy, tasty, and super simple!

    Ooo, that looks so pretty! Perfect for summer. I don’t like feta but I would love it without. I’m going to have to try cutting up a watermelon like that. When I cut up a watermelon, it always looks like a mess.

      I always hated cutting watermelon before because of that same reason. I need some sort of order. Haha! Doing it this way is so handy!

    My husband LOVES cucumber and watermelon more than any other vegetables or fruit! He would love this!!!
    My go-to has been two seeded cucumbers peeled and sliced, covered in about 1 tsp of salt. Let stand for one hour in fridge, rinse, pat dry, cover in about 2 tbs of fresh dill and 2 tbs of white wine vinegar. But this has way less sodium and sounds so refreshing!!!

    I have always loved the smell (artificial I know, but still) of cucumber-melon lotions etc…. I can only imagine how good it would taste!! We always have the ingredients around during summer too. YUM
