Every Sunday my family gathers at my parents’ house for family dinner. Each of us have a different job. My dad and brother are in charge of the main coarse. My sister does a side dish or a salad. My mom and my husband usually watch the kiddos. And I get the wonderful task of making dessert. I love this job. Dessert is my favorite part of the meal.
my husband and I decided to go gluten free, I was looking forward to finding delicious gf desserts. Because I was not going to miss out on that part of the family dinners! A few weeks ago I found one that I thought was fantastic!
It’s gluten free, easy to make, and it’s chocolate!!
This recipe is only three ingredients. The original, from High Heels & Grills, was two. But to make it my own, I tweaked it to fit my family’s needs. (Turns out my “familys needs” means more chocolate. Enter chocolate chips.)
For this gluten free double chocolate fudge brownies, you’ll need:
1 Cup of Nutella
1 Cup of chocolate chips
1. Prepare an 8×8″ pan, or round pie pan by putting parchment paper in it. Spray with non stick cooking spray.
2. Measure out the Nutella and melt it in the microwave. Let it cool. 3. Beat the eggs for about 8 minutes. They will almost triple in size. They will be light yellow, and just a tiny bit frothy on top. 4. Add the Nutella and gently mix.
5. Add the chocolate chips and mix.
7. Let it cool, then take it out of the pan holding the parchment paper edges.
We tasted this dessert when it was first out of the oven. I thought it was delicious but not everyone was sold quite yet. It almost had a soufflé texture which can be an acquired texture for some.
After it had cooled off, we ate it with ice cream. It was delicious!! The next day, after being in the refrigerator all night, it was even better, in my opinion. It was denser and fudgier and just amazing!
