3 Ingredient Pineapple Ricotta Salad

I love this time of year! Spring is so full of new beginnings, gorgeous colors, and bright flavors.

It’s also when we start getting together with people more often to, you know, socialize. Picnics and parties are starting to fill up the calendar.

Now you have the daunting task of deciding what fantastic side dish you’ll be bringing to all of these fun get togethers.

This 3 Ingredient Pineapple Ricotta Salad is perfect for a few reasons.

First off, 3 ingredients!! It’s sounding super easy so far…

Next, Pineapple! Ricotta!! Yes, please!!

And lastly, all you have to do is stir and chill.

Oh, yeah, and its extremely delicious! (I suppose that’s an important one.)

This is a super easy, 3 ingredient Pineapple Ricotta Salad. Perfect for any spring or summer picnic or party!

For this 3 Ingredient Pineapple Ricotta Salad, you will need:

32 oz ricotta cheese (I used part skim milk, but by all means, use your fave!)
5 oz box Instant Vanilla Pudding mix (Instant is important! Cook and Serve will taste grainy!)
1 20 oz can pineapple chunks with the juice drained (You won’t need the juice for this recipe, but you can always use it for something else…or just drink it!)

  1. In a large bowl, combine the ricotta cheese and instant pudding mix.

  2. Add the pineapple chunks and mix well.
